I'm in the same boat but already have the WM/IB experience.
Are you simply trying to get into b-school or aiming to continue in vc? If you're that risk averse skip the start up and get mkting experience at an established firm. I don't think one could go wrong learning from experienced people.
The question is great.

Iron Chef here (changed login name slightly b/c I couldn't login as original name), but I'm the same guy. Re: operational experience, the problem is that for industry my sector expertise is getting hit extremely hard (telecom and wireless). Also, marketing and biz dev are possibilities given my non-technical background but what about finance? Working in the finance department of a startup would give me a useful skill set and be a good intense learning environment, but from your past experience as a banking analyst, would it be possible to enter banking post-startup finance experience and top MBA if I chose to do that? Thanks again for the input.
