Why are you so concerned? Your motives are suspect.

...some stability for a change. The previous management forced us into this situation. Their constant policy changes were ridiculous.
Is the union the answer to all our problems? Probably not... BUT... its better than the alternative.

Tell me, how does a union restrict a company or individual manager from changing policy?
They can't. they don't. Again, you have not done your homework.
