Funnily enough, recruiters never asked me once on why I got a degree in engineering when I had wanted to do consulting. |

Let's be clear for a second.
Are you saying that you have a Ph.D. in engineering, and you currently work in consulting, and no recruiter ever asked you why you invested 6+ yeara in a PhD program in order to enter consulting?
An undergraduate degree in engineering or physics would be looked on quite strongly in many consulting firms - very quantitative background, etc. The question only comes up if a person chose to spend most of their twenties pursuing a degree that is not immediately relevant to consulting and then wants to work in a "team oriented business environment" once they are done.
