Do most firms follow the standard for notification after an interview:
offering a position - a phone call
rejection after interview - a "snail mail thanks-but-no-thanks letter"
My interview was on friday and I was told I would hear from them the beginning of this week (it's noon on wednesday and no word). Should I be expecting a letter in the mail?

Are you working with an agency? Then, the employer may let them know first. Either way, some firms may not let you know anything for as long as 2 weeks. Yes, it's unprofessional - especially if they promised a quicker response. Yes, it's possible that you will hear nothing, and only receive a "thanks but no thanks letter". But most likely you will receive a call. I would be able to venture a better guess if I knew which firm it was.
