I was on the business reengineering side of several SAP projects, and I cried for the kids who actually knew anything about SAP.
Stay very far away from knowing anything about SAP. I worked for over 5 months on one project before I actually knew what one of the screens looked like.
Just read the indices of a few SAP books, make some ridiculous recommendations of changes the tech people should make, then go home happy.
You should know what these large scale implementations look like, but stay away from knowing anything technical about it. Sooner or later, SAP will go away and your skills will have little value.

SAP has already lost its luster as a "skill". Ask all of those consultants who have been laid off at Deloitte Consulting over the last two years. Most of them were SAP people.
