I see the dilemma given the fact that, as you mentioned, the ring is quite big, it will most probably definitely attract your interviewers attention, and some form of prejudice towards you might be formed, maybe because you are recently engaged, the size of the rock ... whatever ... and, the fact that you are a senior in college, i.e. relatively young to be engaged in today's society At the end of the day, interviewers are human and subject to our inherent flaws, including, prejudices towards other people based on certain material externals. If it doesn't bother your fiance, it might be a good idea not to wear it ... as well, you won't need the added stress of wearing it, or catching your interviewer taking a glimpse at the ring. Do whatever makes you feel most comfortable during the interview, unless, of course it bothers your fiance. Good luck and congratulations on getting engaged.
Message: It all depends on if you really want to be a consultant. Consultancy is not a career for most married people. Consulting firms worry when you wear a ring, whether engagement or wedding. It means that you have other commitments and to them that usually means that you will not be willing to do what single consultants will, ie. travel 80-100% of the time. If you and your fiance agree that this is the career path that you both can deal with, then I say leave the ring at home. Don't give them a reason to think that you are not committed, especially during these times of economic downturn.
