Sometimes during meetings (such as interviews or meetings with clients) I don't know what to do when I look in the other person's eyes and he/she stops looking in my eyes after a second or so.
This kind of behavior makes me avoid an eye contact with this person during the rest of a meeting.
Any suggestions?

It depends upon the culture in which you are operating. In some cultures, it would be considered rude to look at someone directly. Perhaps the individual on the other side of the table come from such a culture.
