I was wondering how significantly do business school essays change from one year to the next? Will HBS/Stanford/Wharton's essays for this year be really that much different from their quesitons last year?
I am asking this because I am considering starting on my essays early so I have enough time for them

People will have to answer that question for you on a case by case basis.
Some schools use the same essays year after year. Others jiggle things up a little, either by changing a few of the essays or all of them entirely. In addition, some schools that use "stock" essay questions may modify one of them if they feel it is not eliciting the desired information.
If I were you, what I would do is get a copy of the school's essay question, ten call their admissions office and ask if they are likely to change.
If the essays do change, modify the focus of your writing at this time. Rather than writing to answer a *specific* essay, identify the concepts that B-school essays tend to touch upon (ie. "Cite an instance where you showed leadership," "Why do you want an MBA," etc.) and write about those; later, when you get the "real" questions, you can just cut and paste your work.
