The average score (50th percentile) is roughly 525 or so. When the test was designed, the average was supposed to be around 500... but it has slowly become a little higher than that, and will continue to do so as more people take the test repeatedly.
Basic B-schools (smaller or state school) like students to have a score of at least 500 to 550. The average is usually 550.
3rd Tier schools will often have an average of close to 600.
2nd Tier (10 to 25 ranked) are often around a 650 average.
1st Tier (Top 10) are close to 700... with Stanford having a 725 average.
Those are some rough averages to work with... If you score a 550, you might apply to a couple of 3rd Tier and a couple of smaller schools. If you score a 625, you might try to apply to a couple of 2nd Tier and some 3rd Tier schools... and so on...

If you are over a 600 GMAT, and feel you have a strong app, you should not hestitate to apply to any institution. As long as you are willing to put in the time and pay the fee, don't leave yourself wondering "What if??"
Apparently, GMAT averages have increase in the last 5 years since I took mine, but at that time, my 650 was above average at a top 10 school.
Also, don't forget, a school that touts a 660 GMAT average has plenty of people in the 620 - 650 range. Just as a 700 doesn't guarantee anyone admission, a 600 and above will rarely ever preclude you from getting into a good school.
I have always held to the belief that if you do well on the GMAT, LSAT or SAT, you are probably smart. But just because you don't do well, doesn't mean you are not smart! Think about.
