Does this mean that if I am considering spending time as a paralegal before law school that I need to commit at least two to three years before it has any sort of positive effect? |

Two years is probably optimal. If you're going into the law, being a legal assistant won't be considered a "career" anyway. By the end of two years, you'll be psyched to get back to school.
