Hello,
My alternatives are be fired or resign with 2 months salary. Is it possible to resign and retain my rights to unemployment insurance? I have to figure this out by Monday. What should my resignation letter say?

My friend, if you will be fired, would you receive anything from the company? My guess is that you would receive nothing from the company.
In this situation the best option, at least from my point of view and considering as much information I have, is to resign take your 2 months salary and go without looking back.
Do not forgot before forwarding in your resignation, ask for a letter of references (which in order to avoid any "surprise" is better to be write by you and only forwarded to your manager for signing) this letter should offer some support for you in the future.
About the content of your resignation letter this should specify the exact date of resignation, to be dated and sign by you.
If you want to invoke some reason probably the most used are differences of opinion regarding ... .
It is also extremely important to see what have leaded you to this situation. Try to learn as much is possible from this experience in order to avoid for future situation like this without happy ending.
