There is the opposite theory that you should NEVER point out any weaknesses in your cover letter... why draw attention to a weakness?
The HR process isn't too hard to understand. HR ads are easy enough to decipher. "Must have 2 to 4 years experience doing marketing at a consumer products company" means what it means, and you you have 1 or 5 years experience, or you worked at a company that was not a consumer products company, HR tosses the resume.

There are those who respond to ads like the above, and hope for ads to come along that match exactly what they do, or send resumes to ads that aren't matches and let HR toss the resumes.
And there are those who are more proactive, and find jobs through networking, or through agressive sales tactics that get past HR and directly to the decision maker.
