The firm I'm working for this summer interviews in August and makes offers which explode in Sept, before school starts !
If I got the offer, I would have to take it before I could look elsewhere.
I really want to explore.
How binding are these offers ?
What do I do ?

It's not that uncommon to ask for an extension once you get an offer. Try to be a little bit flexible about how long of an extension you need. In other words, have a specific date in mind that you think would be a resonible amount of time to consider your options.
