I graduated in June 04, but I have had trouble finding a position both because of the economy and because I am looking for a career not specifically in my major.
I have been offered, and accepted, a 6 month position with a great company (Alpha) in a roll which I find very interesting. This position may turn into a permanent position but with low probability of being the same great position because only 2 people in Alpha have this job full time. I would most likely be placed into some type of customer service position until something more fitting became available ???? no one knows how long this could be or if I would even be offered the permanent position.
I also have interviewed with and am expecting further contact from other employers (Beta) for full-time, permanent positions which are not as interesting as the temp job with Alpha. These permanent positions would start at the same time that the temp job would be ending.
Optimally, I would like to take the temp position with Alpha and move into that roll full time. I do not want to be stuck in a customer service position for more than a year and would not be happy in that position.
Should I accept a full-time position with Beta to keep my options open and then decide what is best for me at the end of the temp position with Alpha?
Is it ethical to ????keep my options open???? by accepting a position with Beta and then possibly turning it down for a position with Alpha?
If I enjoy my job with Alpha and am offered a non-relevant permanent position in customer service, should I accept and wait it out?

It really depends how important it is to you to enjoy what you are doing. and how important the money is to your present budget.
It also depends how risk averse you are as basically it is a gamble, unless you express interest in beta, while you wait fro a response from alpha.
If you go with alpha you can then leverage that experience to get a similiar position at another firm, if alpha doesn't have one for you when the 6 months are up.
I would go with alpha. If you don't get the job at the end of the 6 months you could take the customer service job - for the sake of remaining employed (which makes you look like a more attractive candidate than not being employed.) while you search for something at another firm.
