I've been at HEW for almost two years as an SCA, and I really need to leave because I am absolutely going crazy here.
However, I feel that I will not be competitive in the interviewing field because everything learned at HEW is proprietary and doesn't really apply anywhere else. I really haven't learned any business skills, either... just how to be a drone and configure shit based on incorrect requirements.
Does anyone have any tips for getting out? How do I make up my real-world business knowledge deficit in interviews?

Get a copy of your job description and/or last feedback report. What skills are listed? Do you have those? Are you good at them? You did have skills when you got here, right? Did they totally atrophy?
If you can learn and be an enthusiastic member of the new employer's team, they will want you. You will have to resurrect your enthusiasm before you talk to anyone outside.
It is hard to decide what we want to be when we grow up, but take some quiet time to think about what you do want to do next. It may be totally different than what you are doing now. Landscaping is looking good to me now.
