If I were to narrow my focus to healthcare consulting focusing on emerging technology that would impact the industry, such as having had experience from a non-profit, think tank, which companies should I look into for a consulting positions?

Not sure what you meant by the second-half of your email [the non-profit, think tank part didn't make sense to me!] However, if you are looking to use your life science degree to focus on emerging technology, you could:
1.) Focus on healthcare consulting boutiques that have small [VC funded or recently public] companies as clients.
2.) Work for the startup healthcare product companies themselves
3.) Get a law degree and help these companies from an intellectual property perspective.
