I know very very little about sponsorship policies and visas. I was curious if someone has any links out there that explains the different visas and green card requirements?

I am very familiar with this, after having lived it for the last while at Deloitte...
a) You can negotiate with Deloitte as to when they will start your GC. I recommend you get it in writing and do not accept anything less than starting your GC within 1 year at the firm.
b) Deloitte WILL TRY EVERY POSSIBLE TRICK TO SLOW DOWN THE PROCESSING.
