So where does Japanese or Korean fall on that scale (easy/hard/hardest) sleepyjean? |

I'm not sleepyjean, but I can tell you that Korean is in the highest level according to recruiters, and Japanese I'm not 100% since I've read that it's in the highets or at least no less than one level or so below highest.
In terms of those two languages, the grammar is practically identical so it's fairly staightforward to learn one (verbally) if you have the other.
