I can't speak specifically to E&Y's technology and risk group, but I can tell you what the same group does at my firm (Big 4).
If you are doing an internship this summer, you can expect to spend quite a bit of that time working on Sarbanes-Oxley work. What you will be doing is either helping a company document their controls over all of the significant business cycles (ie. revenue, treasury, finanical reporting) or you will be testing the company's controls. Independence rules are such that if E&Y is the Company's auditor, then E&Y cannot help with the documentation.
All that flowcharting of controls you have been learning in school--this is where it gets used. My guess is that you are probably an IS major.
Your day will be spent interviewing the client's staff to get information to document the controls or interviewing to make sure that the controls work. That is what you can expect to be doing.
